That’s because the name of the property isn’t Icon. I even linked the documentation page for the correct name.
You’re showing screenshots from settings, are you asking how to put one of these anywhere you want or on the dock icon? If you want to put them anywhere, you just draw it yourself. If you want to use the dock icon, there’s a right and a wrong way.
