I’m not an owner of the Windows 10 versions yet, so:

Is it possible to port/compile/run one of our app’s made for Mac and Windows 7 to Windows 10 Mobile using Microsoft’s extension Universal Windows Platform?

Nope, not yet.

With some luck the Project Centennial Converter will enable that.

you can download Windows 10 from Microsoft web servers (while it is still possible to do / Windows 10 upgrade is free) and install it later.
