I have an image which is 700 pixels wide, 245 pixels high and 72dpi
If I make a Retina version - I understand it needs to be double the size (1400 pixels wide and 490 pixels high) BUT does it also have to be 144dpi - or does the dpi stay the same (72dpi) ???

DPI doesn’t matter on the screen. So 1400x490 is okay.
an image that is 700 pixels wide, 245 pixels high and 72dpi
is displayed on screen at 72 dpi.
an image that is (700 pixels wide) x 2, 245 pixels high (x 2) and 72dpi
is displayed on screen at 72 dpi.
and
an image that is (700 pixels wide) x 2, 245 pixels high (x 2) and 144dpi
is displayed on screen at 72 dpi.
dpi value = number of defined pixels (1 for 72 dpi, 2 for 144 dpi,
)
In the old time, PhortoShop was speaking of points and pixels.
For screen dpi does not means anything; for printings
dpi matters !
